I also use kombucha vinegar when I'm making chutneys. It's not as acidic as normal vinegar so it won't keep as well on the shelf, but keeps ok in the fridge. You also don't need to use as much sugar in the chutney because of that. I also chop up spare scobies into 'worms' and feed it to my chooks. They don't like drinking it in their water but they gobble up scoby worms like nothing on earth!

In January I had a second ferment on the go of my Kmobucha. It was so hot that the usual 2 days of 2nd ferment was too many. It tasted so vinegary. I had wondered then whether the 'Scoby' and the 'Mother' Were the same thing. I Have a big drinks canister of Kombucha on the brew. I think some will be put aside for vinegar. Thank you for this information.

One of the young girls in our simple living group added kombucha vinegar to the bone broth she was cooking up in a recent workshop. I had both water kefir and kombucha on the go a while back but couldn't cope with both of them as the rest of the family didn't drink it so just stayed with the water kefir. The scoby was fascinating to watch though.

Brilliant! Do you find it good as a cleaner? I have been put off using cheap white vinegar after reading on here of its link to the plastics industry (and of course being sold in a plastic bottle) I will try and source a Scoby and start making it. Thanks for the info and have a wonderful day.<br />Fi
